Wild nettles have a flavor similar to spinach. In their raw form, they cause a mild dermal irritation, owing to an acid present in the hairs on the surface of their leaves and stems. However, when nettles are processed -- whether by drying, cooking, or simply macerating the leaves -- the stinging aspect is neutralized, and they can be safely handled.
Nettles are high vitamins A and C, iron, potassium, manganese, and calcium. It is used in herbal medicine to treat disorders of the kidneys and urinary tract, gastrointestinal tract, cardiovascular system, rheumatism, and gout.
